This Easy Keto Pot Roast Deserves a Spot in Your Meal Plan

A Slow Cooker Pot Roast for Your Keto Meal Plan

Your keto meal plan doesn’t have to be boring with this keto pot roast. Even better, this slow cooker roast beef recipe has minimal carbs for a guilt-free Thanksgiving dinner!

Ingredients:

  • 900 grams boneless rib roast
  • 16 ounces grape tomatoes
  • 1 garlic head, peeled
  • 8 sprigs fresh thyme
  • 3 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • garlic powder
  • kosher salt and pepper

Directions in Making Your Keto Pot Roast

Step 1: Preheat the Oven and Prepare the Ingredients

Preheat the oven to 350° F. Prepare your ingredients by thawing the beef and peeling the garlic cloves.

Tip: When you buy your rib roast, don’t be afraid to choose one with a high-fat content for this keto recipe.

Step 2: Season the Beef with Garlic, Salt, and Pepper

Place the beef on a wooden chopping board to make this step easier. Season the beef with about a teaspoon of garlic powder, a teaspoon of salt, and half a teaspoon of pepper.

You can also season it however you like, but make sure you cover both sides.

Seasoning doesn’t just add flavor to the meat. The pepper makes the beef’s meaty flavor more distinct while the salt makes sure the flavor reaches the sides of the roast from the inside.

Step 3: Roast the Sides and Glaze the Pan

Place the seasoned beef in a big roasting pan, and sear the beef on both sides until brown. Use the balsamic vinegar to deglaze the roasting pan and cook the beef for one minute.

Tip: Keto diets require you to consume more fat and protein to promote natural weight loss. Grass-fed meat is filled with these nutrients, especially polyunsaturated fats.

Step 4: Make the Tomato Mixture

In a medium-sized bowl, add the tomatoes, olive oil, thyme, garlic, and a quarter teaspoon each of salt and pepper. Mix the ingredients together until everything is well-combined.

This tomato mixture’s slightly tangy flavor and its red hue are perfect for your Thanksgiving dinner. Tomatoes are filled with nutrients, such as vitamins C and K, dietary fiber, and potassium.

Step 5: Spread the Mixture on the Beef

Use a spatula and cover the outside of the beef with the tomato mixture. Turn the beef over to get to the bottom of the beef and then pour the rest of the mixture into the pan when you’re done.

Step 6: Roast the Beef Until Medium-Rare

Cover the roasting pan and let it roast for about an hour until it’s medium-rare. Depending on the thickness of the beef, the time may take longer.

If you want the beef cooked more, you can let it roast for two to three hours.

Step 7: Slice the Roast Beef

Once done, transfer the beef to a wooden cutting board, and let it cool for 10 minutes. Slice it as thin as you want.

If you want to cook it a little more, put it back in the pan and roast it for another 30 minutes.

Step 8: Serve with Tomatoes and Garlic

Serve the sliced beef on a platter. Add some cut-up cherry tomatoes and cloves of garlic to taste.

There may be so much ado about the Mississippi keto pot roast, but it’s all for a good reason: it is mouth-watering. Unlike the traditional pot roast, this is less spicy.

It also pairs well with French gravy called au jus gravy, as well as a ranch dressing mix you can make from scratch.

The recipe for keto Mississippi pot roast is similar to the one above, except you can skip the other fancy ingredients like thyme and balsamic vinegar.

What you need to focus on is the au jus gravy, which you can make using the following simple ingredients:

  • 1/4 cup of drippings from your meat
  • 2 cups of bone broth
