5 Delicious Holiday Dishes Made with Thyroid Healing Foods
1. Carrot and Pumpkin Curry Soup
- 1 chopped onion
- 3 chopped celery stalks
- 1 Tbsp sweet paprika
- 1/2 tsp turmeric
- 1 Tbsp salt
- 1/2 kg peeled and chopped carrots
- 4 cups vegetable stock
- 1 1/2 cup coconut milk
- 2 cups of water
- 1 cup pumpkin puree
- 1 Tbsp curry powder
Step 1: Simmer the vegetables
Put the chopped onion, carrots, and celery in a medium pot, then add the vegetable stock and water. Let it simmer for 30-45 minutes until the vegetables become tender.
Step 2: Puree
Transfer the veggies and liquid to a food processor. Then, puree until you achieve a smooth consistency.
Step 3: Cook with the remaining ingredients
Bring the puree back to the pot and whisk it with the coconut milk, curry powder, turmeric, sweet paprika, and salt. Adjust the seasoning based on your taste.
Afterward, cook for another 15 minutes.
Step 4: Serve!
Once done, remove from heat and transfer to a bowl. Top it with crunchy pumpkin seeds and serve hot!
2. Kale Salad with Apple and Cranberries
- ½ cup pecans
- 1 medium apple
- ½ cup dried cranberries or cherries
- 1/4 cup chilled soft goat cheese
- 4 medium radishes
- 1 cup kale
- 3 Tbsp olive oil
- 1 ½ Tbsp apple cider vinegar
- Sea salt and freshly ground pepper
- 1 Tbsp smooth Dijon mustard
- 1 ½ tsp honey
Step 1: Preheat the oven
Preheat the oven to 350°F.
Step 2: Toast the pecans
Place the pecans in the baking tray and toast them for about 5-10 minutes, tossing once or twice to bake evenly. Once they are lightly golden and fragrant, remove from the oven and let them cool.
Step 3: Prepare the salad
Remove the kale leaves from the stem, and chop them off into bite-sized pieces. Transfer to a salad bowl and sprinkle with a bit of salt.
Next, scrunch the leaves with your hands until they turn darker and fragrant. Afterward, add the thinly sliced radishes to the bowl.
Step 4: Mix in the other ingredients
Chop the pecans and cranberries coarsely, then throw them into the bowl. Chop the apple, too, into bite-size pieces.
Add it to the bowl as well, and top everything off with the goat cheese.
Step 5: Add the dressing
In a small bowl, whisk in all the dressing ingredients, and pour it over the salad. Toss until the salad is coated evenly.

3. Dill-Poached Salmon with Yogurt Sauce
- 4 large sprigs and 1 Tbsp chopped fresh dill
- 1 Tbsp chopped fresh parsley
- 3/4 cup plain Greek yogurt
- 2 tsp fresh lemon juice
- 1 cup low-sodium vegetable broth
- 4 trimmed and cut into matchsticks radishes
- 4 1/8 kg salmon fillets, 3/4 inch thick
- Sea salt and fresh ground black pepper
- 1 peeled and cut into matchsticks carrot
Step 1: Simmer the dill and salmon
Tie the dill sprigs together using kitchen twine. Put the dill sprigs, broth, and 1 cup water in a large skillet.
Bring them to a simmer over medium heat. After that, add the salmon, adjusting the heat to maintain the simmer.
Cover the skillet and cook for 5 minutes.
Step 2: Prepare the yogurt sauce
Mix the yogurt, lemon juice, chopped dill, parsley, and salt and pepper in a small bowl. Set aside.
Step 3: Add the remaining ingredients
Add the carrots and radishes to the pan. Cover and cook for 5 minutes or until the salmon is cooked through and the veggies tender.
Step 4: Serve!
Transfer and arrange the salmon on a platter. Top it with the veggies and yogurt sauce, removing the dill sprigs. Enjoy!
4. Herb and Salt-Rubbed Turkey
- 2 Tbsp chopped thyme
- 1 Tbsp extra-virgin olive oil
- 2 Tbsp chopped sage
- 7-kg turkey
- 2 tsp chopped rosemary
- 1/4 cup kosher salt
Step 1: Dry brine the turkey
Prepare the turkey four days before roasting it. Loosen the skin of the bird around the shoulders and cavity.
Slide your hands underneath the skin around the thighs, breasts, and drumsticks to loosen it as well. Then, in a small bowl, combine the herbs and oil.
Rub the mixture on the meat and bring the skin back into place. After that, rub the skin and cavity with salt.
Using a kitchen string, tie the legs together. Don’t forget to tuck the wing tips behind the neck as well.
Place the turkey inside a roasting bag and tie it. Put it in another bag and tie it again.
Refrigerate the turkey for 3 days, turning it over daily. Pat the turkey dry after removing from the bags.
Transfer to a flame-proof roasting pan and refrigerate, unwrapped.
Step 2: Roast the turkey
Before roasting the turkey, preheat the oven to 425°F. Roast the turkey for 30 minutes.
Reduce the heat to 325°F. Keep on roasting until the thickest part of the thigh registers 170°F.
Step 3: Carve!
Once done, remove the turkey from the oven and let it rest for 30 minutes. Then, carve the thyroid healing meat before serving.
5. Strawberry Mousse
- 1/4 kg strawberries
- 1 cup whole or whipping cream (cold)
- 1/2 cup granulated sugar
- extra strawberries for topping
Step 1: Puree the strawberries
Put the strawberries and sugar in a blender or food processor. Puree.
Set aside about half a cup of the puree.
Step 2: Make the mousse
Whip the cream until you achieve a very thick consistency. Fold the puree into the whipped cream until combined.
Step 3: Transfer to glasses
Get the puree you set aside. Put a couple of tablespoons of the puree on the bottom of medium glasses, then add the strawberry mousse on top.
Step 4: Refrigerate!
Refrigerate for one hour or longer as desired. Top it off with fresh sliced strawberries before serving.
